Good to see in recent Fairfax Epicure Good Food that Colin Fassnidge of My Kitchen Rules fame (“Sydney’s feisty rock-star Irish chef” according to the Daily Telegraph) includes a FALK copper roasting tray in his essential toolkit. By this devious means they obtained tables for the super sold-out Melbourne opening (at $525 per head): to impress clients.

"Copper, brass and brushed gold are the hottest looks this winter"We agree with this heading in The Age Epicure recently, at least so far as it concerns copper cookware. However, we looked for a FALK copper cookware masterpiece amongst the pictured products, alas in vain.We therefore wrote in haste to the editor with an image of a FALK copper casserole; pointing out its burnished copper exterior and brushed stainless steel interior...quality built to outlast. It's hot, hot, hot, we said.We anxiously await an article redressing this oversight.

DON'T BE NERVOUS; FIRST TIME USER OF COPPER

I must say upfront that I am David’s mum. But, I was not a user of copper cookware ….that is until David gave me a brand new FALK copper 28cm round gratin pan. He’s a good boy!
I was thrilled. I had wanted to upgrade from my old non-stick pans with their worn surfaces and uneven heat distribution. But I was a bit nervous. Would I like it as much as David said I would? Would it be hard to clean?
I had selected three prime porterhouse steaks from my favourite organic butcher. I marinated them for an hour or two in a small amount of olive oil, garlic and salt and pepper.
I tentatively placed the gleaming new copper pan on the gas flame with a little olive oil and waited for it to smoke a bit. I gently placed the marinated steaks in the hot oil and stepped back to watch them sizzle and sear…..beautiful aroma.
I turned the steaks after five minutes, without drama; they looked great, with excellent caramelisation. I turned down the gas and gave them another five minutes (I like mine reasonably well done…I know…it’s not cool). Covered them in foil and let them rest for 15 minutes. Served with mushrooms, white wine sauce, nicola potatoes and spinach. Simple, but very well received.
The pan felt really solid, but not too heavy. Great to look at on the bench, on the stove or even on the table.

“apples, blueberries, raspberries, strawberries, figs, feijoa, grapes, lemons, limes, honeydew melon, rockmelon, watermelon, nashi, nectarines, oranges, passionfruit, peach, pears, persimmons, plums, pomegranate, rhubarb”.
Plenty there to choose from to make some beautiful jams and jellies to see you through

Number 9 on the list of “20 Ways to Cook Better” by the luscious Nigella in The Age Epicure this week is:
“Be extravagant when it matters
A good copper roasting tin is an incredible cooking vessel. It doesn’t stick, the flavours are wonderful, the way it conducts heat is fantastic. They don’t cost as much as a car, but they are not far off. It so happens that’s where I like to spend my money. If you asked me if I would rather buy a designer dress or a copper roasting tin, I’d have the roasting tin”.
Nigella,up to there, we are with you 100%.
Where we diverge is that the picture in The Age (obviously not chosen by Nigella) is
not a FALK. Why?.. We cannot imagine.

We were taken by this photo which appeared in the DIY column in the The Telegraph (UK). We copy it here because we like the photo and, who knows, there may well be some Australian fans of FALK who have a similar problem.
The Telegraph reader wanted to know.
"What will hold my saucepan rack in place?"
Q I have bought a wood and metal saucepan rack to fix to my kitchen wall…….and I am at a loss to know what fixing to use for the metal brackets.
A If you wanted to hang up something light like tea towels or oven
gloves, I’d say use a proprietary fixing, such as Rawlplug’s Selfdrill Plasterboard Fixing ........ But with the heavier weight of your saucepans, you will need to fix through into the blockwork. You might need to buy a long masonry drill bit – say 150mm. Then use 75mm screws (or longer if needed) and ordinary expanding plastic wall plugs.
This answer sounds good to me, but don't take my word for it.

Copper Kitchen in The Age Epicure

It was good to get a mention in the Desirables section of the Epicure, the Tuesday foodie supplement in the Melbourne Age. It has stimulated a buzz of interest on our website and some pre-Christmas orders. I disagree however with the assessment that the FALK brushed copper appearance diminishes the razzle dazzle factor. I think it enhances the feel of European quality, beautifully understated. Other opinions welcome.

Rivets anyone?

A professional chef, who wants to buy FALK copper cookware, wrote to us to say
that he thought the FALK rivets holding the handles look a bit smaller than the
competition and questioning their longevity in a hardworking professional
kitchen. I know the answer, but nevertheless referred the question to Jan Van
Achter, hardworking director of the FALK family company in Wespelaar in Belgium.
I quote his response:
“Since more than 25 years we deliver to professional chefs in Benelux and since more
than 16 years we deliver to professional chefs in the USA. who never complained
the handles had loosened. Instead, the riveting of smaller rivets was highly appreciated:
* no detached handles
* small rivets for easy cleaning inside out
* small rivets are less disturbing during cooking
* small rivets look better on the pans like big rivets only look good on the Brooklyn bridge and the Eifel tower.
We heat up the 3mm stainless steel rivets and pressed them on to the handles with a pressure of 10tons per cm2. We deliberately decide to make 3 holes and to smash 3 rivets for extra safety the handles are attached longer than a lifetime.
We make them this way since more than 25 years. We get about 5 defected pieces back on the approx 10,000 pieces we make on a yearly basis. The defects can numerous things but never have we had a serie of broken rivets or loose handles that
could convince us to work out the riveting differently than today's way.”
I could not have put it better myself.

But they are not hung there for decorative
purposes. ‘We use them every day,’ Vaussion (executive chef) explains.”

Copper down the Otway coast

Last weekend, I took the trusty FALK 28 cm copper casserole, and the family, down the Otway coast. To Lorne actually, or to be more precise, Allenvale Cottages, in the forest just behind the town. Atmospheric timber cottages with all mod-cons, in the most magic setting, beside the creek (in which a platypus lives).
Being Lorne, it was a no-brainer to buy fish from the Co-op on the pier for the family dinner on Saturday night. I chose a selection of beautiful rockling fillets, gummy shark and squid, which came together to make a very well received fish-dish (Provencale? – olives, tomatoes, aubergine etc). The big, solid, copper pot made it a breeze, even on the unfamiliar stove, and we accompanied the meal with a nice, crisp, fairly local, 2009 Granite Hills Reisling, from Baynton in the Macedon wine growing region.

FALK in the bush

At the weekend, we took our FALK frying pan into the pine forest near Beechworth. Under the guidance of Guy who knows his wild mushrooms, we gathered a basketful of Saffron Milk Caps and Slippery Jacks which we cooked over a camp fire at the edge of the forest.
Guy had come fully equipped with butter, chilli flakes, salt and pepper, as well as some fine olive oil and red wine vinegar.We cooked and ate the Saffron Milk Caps within an hour of picking, in the bush by the fire, on slabs of toasted bread with a cup of billy tea. They were sensational!

Without doubt, the standout dish on my recent trip to USA and Canada was (see photo)
Seared Monterey squid with blistered favas and oregano, with sides of long cooked chard, escarole and green olives, and grilled asparagus, aragula and parmesan; accompanied by warm corn bread and a pint of Anchor Steam,at Nettie’s Crab Shack, Union Street, Cow Hollow, San Francisco. No sign of any copper in the kitchen; but imagine what the chef could have done if he had a FALK!
I spent some time in Quebec, Canada and loved most of the food (notably excepting the local favorite, Poutine; which is a bit heavy duty for mine; it is a dish of chips covered in gravy and cheese curd). Had a great local coffee variety: Quebecois Vrai: sirop d’erable (maple syrup), espresso, et creme fouette

Visiting a friend the other day, we noticed that she had on display some fine old copper saucepans.Under questioning she said that she had bought them from an antique dealer, intending to use them for display.
They certainly fulfilled that objective admirably, showing off the elegant burnished patina of the old copper. They have obviously been well used and are redolent of fine Spanish cooking. The internal “tinning” was worn through in parts, although the copper is of course still in great condition.One of the beauties of Falk is that the copper has bonded to it on the interior a fine layer of indestructible stainless steel.
One of the saucepans is stamped as having been made in Madrid and bears an old imprinted logo of “Hotel Nacional”. A bit of research reveals that the Hotel Nacional in the centre of Madrid was built in about 1920 and is a stately building, recently renovated.I haven’t yet been able to find out whether Ernest Hemingway stayed there, or perhaps more likely, Franco. I hope to go there one day soon, to find out.

Estelle & Falk copper "Very Good"

Noted that “Estelle by Scott Pickett”, new addition to Northcote, Melbourne fine dining, scored 15/20 (“Very Good”) in recent The Age Epicure review. “The work of a chef who favours all things rich, luxe and showy.” The good mark was probably not solely due to the FALK copper they cook with, but in our view it was clearly a factor. Got to be worth a visit.
