The best copper cookware; what to look for?

What is the interior lining of FALK copper pots? What is “retinning”?
Copper reacts with the acid in some foods and so is not a suitable interior cooking surface (except for jam pans and some others). Traditionally, copper cookware has been lined with tin (and sometimes still is). Unfortunately, tin wears out and “retinning” (replacing the layer of tin) is a dying art these days. FALK uses a patented process to bond a fine (0.2mm) interior layer of stainless steel to solid (2.3mm) copper. The stainless steel has a satinated, brushed surface, for a lustrous appearance and ease of cleaning and is a great cooking surface, an excellent conductor of heat, almost indestructible and will last for a very, very long time.

High gloss or brushed elegance?
Traditionally, copper cookware has had a polished finish. FALK however applies a lustrous, brushed finish to both the exterior copper and the internal stainless-steel. This creates an elegant, understated look, and is easy to maintain. Be sure to have a look for yourself; we think you'll love it.

Cleaning and maintenance
It’s easy. Allow your FALK copper pan to cool before washing it in hot soapy water. We suggest a wet 3M Scotch Brite® pad and cookware cleaning powder to clean both the interior stainless steel surface and the copper exterior. For a stubborn stain, allow the powder to sit for a minute, before rubbing gently and rinsing well. Dry with a paper towel or tea towel. Now and then you can wipe the cast iron handle lightly with cooking oil to remove any oxidation. FALK does not recommend washing copper cookware in a dishwasher.
If you have not polished your pan for some time and the copper has lost its sheen, don’t worry. It can be quickly restored whenever you feel like it using the above technique.
